21. Sprinkle salt on flesh side of salmon. 22. Place salmon in pan, flesh side down. 23. Rub on flesh side of fish pieces. 24. Cover the flesh side of the salmon with the salt mixture, making sure to coat it completely. 25. Cover the flesh side of the salmon with the spice mixture, making sure to coat it completely. 26. Cook the fish flesh side down over medium-high heat until it is almost cooked through and nicely browned. 27. Place fillets, flesh side only, in about 4 tablespoons of the crust mixture and press crust into flesh. 28. Combine salt, sugar, 1 tablespoon peppercorns and 1 tablespoon coriander seeds, and sprinkle over flesh side of fish. 29. Press down on fillet as it cooks to minimize curling, and sprinkle flesh side with salt and pepper. 30. Place the two halves'flesh sides together.
